Christmas Granola Recipe: keep your energy steady all day!

I am the first person to insist that we enjoy the food we eat over Christmas, which is why I love to whip up a batch of this deliciously seasonal granola. Not only is it tasty, it’s also packed with protein, fibre and lots of those easy-to-miss micronutrients that help our bodies to run efficiently so we can really make the most of all the festivities. It’s a great one to make ahead of time, then pair with some full-fat Greek yoghurt and fresh fruit.

Servings: One large jar Prep time: 15 mins Cooking time: 30-40 mins
Ingredients
2 cups of oats or other rolled grains like quinoa or buckwheat flakes (240g)
1 cup of almonds (180g)
1/2 cup of hazlenuts (100g)
1 cup of pumpkin seeds (175g)
1 cup of sunflower seeds (175g)
1/2 cup of dried cranberries (100g)
½ cup raisins (100g)
3 tablespoons of butter
3 tablespoons of honey
2 teaspoons of cinnamon
1 teaspoon mixed spice
Grated rind of an organic orange
Juice of one orange
Method:
1. Pre-heat the oven to 180c
2. Place the nuts in a food processor and pulse for about 30 seconds so that they
are partially crushed, or roughly chop them on a chopping board.
3. Then mix them with the oats / flakes and seeds in a large mixing bowl
4. Next, melt the butter with the honey, orange juice, orange rind, cinnamon and mixed spice in a small pan on the stove
5. Once it has dissolved into a sweet liquid, add it to the bowl of dry ingredients and mix well. This should form a delicious oaty nutty bowl, which is slightly sticky.
6. Place the mixture into a baking tray and bake for about 10 minutes at 180C, then take it out, mix it, and bake for a further 10 mins. Repeat this for a total of 3-4 times (30-40 minutes baking), ensuring that the top doesn’t burn, until it’s golden and crunchy.
7. Once the granola is cooked perfectly remove the tray from the oven and allow it to cool, then stir in the cranberries and raisins.
8. Store the granola in an air-tight container to keep it wonderfully fresh and crunchy.
And as always - I opt for maximum flexibility in my recipes, so feel free to switch the nuts, seeds, fruits and flavours around for what you have available! A couple of spoonfuls of cocoa powder in the butter and honey mix and you have "chocolate granola" for example - always a great one for the kids (whatever their ages!)
