Papaya, Red Pepper & Herb Summer Salad

The combination of sweet papaya, crisp pepper, sharp red onion and the fresh coriander-mint pairing makes a vibrant accompaniment to grilled meats, fish or veggie dishes and really adds some colour and flavours to your table. Papaya also contains an enzyme called papain which helps to support the digestion of proteins so, if you struggle to digest meaty meals, this could be a real winner for you!

Servings: 4 Prep time: 20 mins
Ingredients
1 medium ripe papaya, peeled, deseeded and cut into bite-sized cubes or thin slices
1 large red pepper, thinly sliced
½ medium red onion, very thinly sliced
Large handful fresh coriander, roughly chopped
Large handful fresh mint leaves, roughly torn
Dressing
Juice of 2 limes
3 tbsp extra virgin olive oil
1 tsp runny honey (optional, depending on the sweetness of the papaya)
½ tsp sea salt
Freshly ground black pepper
Method:
Place the papaya, red pepper, red onion, coriander and mint in a large serving bowl.
Whisk together the lime juice, olive oil, honey (if using), salt and pepper.
Pour over the salad just before serving and gently toss to combine.
Leave for 10–15 minutes before serving to allow the flavours to mingle.
Not necessary, but any of these work beautifully with these ingredients:
Finely grated lime zest in the dressing.
A small red chili, finely sliced, for gentle heat.
A sprinkle of toasted coconut flakes.
A handful of chopped roasted cashews or macadamias.
